However, like all meats, moderation is key, and proper handling, cooking, and sourcing are important to minimize potential risks associated with wild game consumption.

We all love to eat, but the preparation side of things can be a bit of a pain, and sometimes confusing. So why not take off your shooting clothing and boots and try this simple roast grouse bird receipe. Once the grouse breast is cooked, then this salad is quick and easy to make. Just the job after a long day out!

Grouse Recipe Ingredients

  • 1 Cooked Grouse Breast
  • 2 Large Mushrooms
  • 1 Bag of Mixed Salad leaves (or fresh from your garden)
  • 1 Small Red Onion
  • 2 Medium Tomatoes
  • 1 Large Pepper
  • A Pinch of Salt and Pepper
  • A Sprig of Coriander for Decoration
  • 1 Teaspoon of Olive Oil
  • Edible Flowers for extra elegance and flavour

For the dressing:

  • 50ml Olive Oil
  • 25ml Balsamic Vinegar
  • 1 Crushed Garlic
  • 1 Teaspoon of Lime (or Lemon) Juice

Serves two/three

Method:

  1. Turn the oven on to 200 degrees Celsius (180 degrees Celsius for fan assisted ovens).
  2. Season well with salt and pepper and sear the grouse breast in a hot pan. Cook for a few minutes each side.
  3. Place the seared grouse in a roasting tin and place in the pre-heated oven for ten minutes.
  4. Set aside the cooked grouse and rest for ten minutes before slicing.
  5. Wash and peel the mushrooms and slice them thinly. Using a frying pan, add a teaspoon of olive oil to the pan and fry off the mushrooms for 2-4 minutes until brown. Set aside.
  6. Wash and slice the pepper and tomatoes in 1/2cm slices and place them in a large bowl
  7. Slice the red onion thinly and add to the bowl
  8. Open the mixed salad leaves bag and wash thoroughly. Add to the bowl with the other ingredients and add a pinch of salt and pepper. Mix by hand. Set aside.
  9. For the salad dressing, in a small separate bowl (or a dressing mixing jar if you have one), add the olive oil, balsamic vinegar, crushed garlic and teaspoon of lime. Whisk (or mix) all the ingredients together.
  10. Slice the cooked grouse in 1cm slices.
  11. Using an oval or round plate, grab a handful of the prepared salad and place in the middle of the plate. Make sure you get a good selection of the contents
  12. Place the sliced grouse breast on top of the salad and drizzle the salad dressing. Decorate with a sprig of coriander and edible flowers such as Violet petals.
  13. Enjoy with a glass of your favourite wine or similar, to wash it all down!
